Jacqueline's banana pancakes

The pancakes can be prepared super quickly and a healthy snack in between. I also like to eat them for breakfast with yogurt and fruit.

My personal recipe for 2 people:

60 g of flour
1 tablespoon of sugar
½ tsp baking powder
½ tbsp vanilla sugar
¼ tsp salt
125 ml milk
1 egg
1 ½ bananas
20 ml vegetable oil
Possibly: Maple syrup and nuts for garnish
Yoghurt & fruit to round off & at will

Preparation steps
1. Mix the flour with the sugar, baking powder, vanilla sugar and salt well in a bowl. Stir in the milk until a thick dough has formed. Whisk the egg. Peel the bananas and puree one of them. Slice the second half banana. Add the banana puree together with the egg to the dough and stir well.

2. Heat 1 tablespoon of oil in a pan and add 1-2 tablespoons of batter for each pancake. Place 1-2 slices of banana on top and let sauté for about 2 minutes, then turn and bake from the second side. Bake pancakes from the whole dough in this way and serve immediately. Served as a cake with maple syrup and nuts, a real eye-catcher on the Easter breakfast table!
