Fluffy Berlin dessert to pamper yourself

Desserts caress the soul. Mine, anyway! Maybe that's because my grandma was such a good cook & baker.
And "Berliner Luft", a mousse dessert cream, reminds me of the Sundays of my childhood. There was always deliciously served. For example the fluffy "Berliner Luft" combined with a fruity raspberry sauce.

The nice thing about this recipe is that you don't need many ingredients, it's easy to prepare and it's the perfect way to cheer yourself up when the ceiling falls on your head at home.

Here is my recipe: "Berliner Luft" with raspberries (4 portions):


Ingredients:

•    2 sheets of gelatin
•    2 organic eggs (M)
•    50 g sugar
•    1 teaspoon of vanilla sugar
•    1 tablespoon organic lemon juice
•    50 ml white wine
•    salt
•    200 g organic raspberries, frozen or fresh
•    to garnish: fresh mint

Preparation:

Soak the gelatine in cold water. Separate the 2 eggs and mix the egg yolks with 50 g sugar and 1 teaspoon vanilla sugar
with a hand mixer for 5 minutes until creamy. Add 1 tbsp. lemon juice.

Warm the white wine in a pot and remove from the heat. Add the gelatine and dissolve in it. Gradually stir the wine-gelatine mixture into the egg mixture and chill for 15 minutes.

Beat the egg whites with a pinch of salt until stiff and fold into the egg mixture. Then fill in 4 glasses of 250 ml and chill for at least 2 hours.

Bring the raspberries to the boil in a saucepan with 2 tablespoons of sugar and 2 tablespoons of water and boil for 5 minutes over a mild heat. Puree the raspberries with the chopping stick and pass through a fine sieve.

Then serve the "Berliner Luft" with the raspberry sauce and garnish with fresh mint.

P.S. I like to eat them on my balconie!
